Cucumber Tomato Salad and Down Payments

Nothing screams summer like a nice, refreshing cuke and tomato salad. No cooking involved makes it a breeze to prepare! I love to make a big batch and serve it as an appetizer or a summer side.

Ingredients:

  • Cucumbers
  • Tomatoes- I like to use the gourmet medley from Wild Wonders because the blend of red, yellow, orange, and purple tomatoes adds just a little extra flavor complexity!
  • Red onion
  • 1 can Chick Peas, rinsed and drained
  • Extra Virgin Olive Oil
  • Red Wine Vinegar
  • Sea Salt and Black Pepper
  • Minced Garlic
  • Fresh hopped basil
  • Fresh chopped parsley

I always wash and stripe my cucumbers. I slice them in half the long way and then into little segments from there. I half my tomatoes, and but my red onion into thin strips. Add them all into a bowl with the chick peas. Drizzle with EVOO, RW vinegar, salt, pepper, minced garlic and herbs. Mix it all up and serve!
